The Perfect Summer Salad

What makes a perfect summer meal? Fresh veggies, tangy dressings and sauces, and pops of sweetness from fruit.

This Keto Asian Cabbage Salad has it all!

We also love that this salad is easy to pull together, economical, and stores well for days in the fridge (in fact, we think it just gets better!), so it’s perfect to prep ahead for easy lunches, lazy dinners, or even to share at gatherings.

Ingredients for this Recipe

For this salad, you'll need:

  • Cabbage and red cabbage
  • Carrots
  • Edamame (or sugar snap peas, if you prefer)
  • Red Bell Pepper
  • Cilantro (basil and mint are awesome in it too!)
  • Mandarin oranges (omit if you need to really restrict carbs)

For the Zippy (optionally spicy!) Asian Cabbage Salad Dressing, you’ll need:

  • Almond butter (sunflower seed butter, tahini, and peanut butter also work)
  • Rice Wine Vinegar
  • Sesame Oil
  • Lime Juice
  • Sriracha

How to make

Step 1

Add all the dressing ingredients to a blender, and process for about a minute, until the dressing is smooth and creamy. Set the dressing aside.

Step 2

Prep your veggies, herbs, and oranges (if using). Defrost the edamame. Layer the cabbage, red cabbage, carrots, cilantro, edamame, and peeled and segmented mandarin oranes into a salad bowl.

Step 3

Drizzle your salad with the Asian dressing. I usually start with a little over half of the dressing, and then serve the salad with additional dressing on the side.

We don’t all eat the same! This salad can be modified to meet your nutritional goals (or to use items you already have on hand!).

No Almond Butter? or a Nut Allergy? Make this salad nut free by using tahini or unsweetened sunflower seed butter in the dressing. Omit the almonds and top with toasted sesame seeds, pumpkin seeds, or sunflower seeds instead.

Mix up the Herbs: Chopped fresh mint and basil taste wonderful in this salad, if cilantro isn’t your thing!

Lower the Carbs / Make this a Keto Asian Cabbage Salad: If your carb needs are very low, omit the oranges and the edamame. You can add sliced red bell pepper if you’d like to add some more color and texture.

A colorful mixture of cabbage, carrots, herbs, and oranges, tossed in a sweet and spicy almond butter dressing. This keto-friendly cabbage salad is perfect for meal prep and summer gatherings!

Ingredients:

  • 4 cups cabbage shredded
  • 2 cups red cabbage
  • 2 carrots peeled and julienne cut
  • 1 cup edamame
  • 2 mandarin oranges peeled and segmented

Instructions
