Baklava Cookies

  • 1 bag ZenSweet Snickerdoodle Cookie mix
  • 3 tbsp ZenSweet monk fruit sweetener
  • 1 tsp ground cinnamon
  • 2 tbsp honey
  • 1/2 cup ZenSweet monk fruit sweetener
  • 3/4 cup pistachios


  • In a large bowl, make ZenSweet Snickerdoodle Cookie mix according to package instruction
  • Wrap dough in plastic; refrigerate until firm enough to form into balls, about 10 minutes
  • Preheat oven to 375 degrees Fahrenheit

For the topping

  • In a saucepan, combine honey, ZenSweet, and cinnamon and melt until dissolved and bubbling slightly
  • Remove from heat and set aside
  • Shape dough into 1-inch balls; refrigerate again if dough becomes too warm
  • Place 2-1/2 in. apart on parchment-lined baking sheets. Bake for 6 minutes
  • Press a deep indentation in the center of each cookie with the back of a rounded teaspoon
  • Fill each cookie with ZenSweet/honey mixture and pistachios. Return to oven and bake until edges begin to brown, 4-5 minutes longer
  • Cool on the pan. Move to cooling racks to fully cool

Store in an airtight container. (Makes 12 cookies, Using 1 TBSP honey gives 4 carbs per serving, using 2 TBSP honey gives 6 carbs per serving)
