What You'll Need

  • Avocados
  • Natural Cocoa Powder (or raw cacao powder)
  • Unsweetened Almond Milk (or other milk of choice)
  • ZenSweet Powdered Monk Fruit Sweetener
  • Vanilla

How to make

Step 1

Cut the avocados, and scrape the flesh into a food processor bowl. In addition, add the cocoa powder, almond milk, ZenSweet Powdered Monk Fruit Sweetener, vanilla, and sea salt.

Step 2

Process the ingredients until the mixture is super smooth and creamy, leaving no chunks of avocado. This is easier if using very ripe avocados, but if your avocados are a bit firmer, just longer until they fully break up.

Avocados do not last long once they are opened and processed. However, the chocolate in this recipe masks the browning of the avocados, so this pudding lasts a big longer than you'd expect!

  • 3 avocados, large (or 4 medium avocados)
  • 2/3 cup cocoa powder (or raw cacao powder)

  • 1/2 cup unsweetened almond milk or more, to thin to preferred thickness
  • 2 teaspoons vanilla extract

Instructions

  1. Cut the avocados, and scrape the flesh into a food processor bowl. Add the rest of the ingredients, and process until very smooth. With some food processors, you'll need to stop and scrape the sides down until all the avocados have been processed into a creamy texture.
  2. Add additional sweetener taste, or almond milk, to desired consistency. The size of your avocados will impact the texture of your pudding, so feel free to adjust as necessary
  3. Store in airtight containers for up to 3 days refrigerated.
