Chocolate Chip Cookie bars ELEVATED!

There's something magic about Chocolate Chip Cookie Bars. They have that melty-soft chocolate-chip-cookie-dough texture with a buttery crunchy topping.

When we decided to bake our mix into bars, we decided to elevate them by adding a layer of peanut butter to the center!

Chocolate and peanut butter are a match made in heaven, and make these Keto Chocolate Chip Cookie Bars over-the-top delicious!

Our keto and low carb baking mixes are simple to use. Just a couple ingredients that you most likely have laying around your house and 5 minutes to mix them up is all it takes!

These cookie bars are one of our favorite creative spins on our best-selling Chocolate Chip Cookie Mix!

What You'll Need

*note: if you add hot butter into the mix, it will melt the chocolate chips and you'll end up with delicious, but dark colored cookie dough! We melt our butter then let it sit and cool for about 10 minutes before adding it to the mix.

How to make

Step 1

Add the Chocolate Chip Cookie Mixes to a medium sized mixing bowl, and then both eggs and the melted butter. Make sure your butter has cooled before adding it so it doesn't melt the chocolate chips.

Step 2

In a small mixing bowl, add 1/3 cup of the cookie dough and 1/2 cup (or more!) peanut butter. Mix to combine the cookie dough and nut butter.

Step 3

Press half of the remaining cookie dough into the bottom of a parchment-lined 8x8 inch baking dish. Use fingers, a pastry roller, or the bottom of a glass to press it into an even layer.

Step 4

Use a spoon to add dollops of the peanut butter mixture over the top of the cookie dough layer. Wetting your fingers helps to spread the peanut butter into an even layer.

Step 5

Scoop the remaining cookie dough in small spoonfuls around the top of the peanut butter layer. Use wet fingers and spread the dough out over the top of the peanut butter layer, gently, so that the two layers don't combine. I think about it as "stretching" the dough to the sides of the pan rather than pressing it down into a layer.

Step 6

Bake the cookies for about 19 minutes, until the edges are golden brown but the center still looks underbaked. Allow the cookies to fully cool before cutting them into slices.

Tips and Tricks for YOUR Perfect Keto Cookie Bars!

Omit the Peanut Butter: These delicious bars can be made with whatever nut butter you love! Hazelnut, sunflower seed butter, and cashew butter will work. These also work with chocolate flavored spreads, like a chocolate hazelnut butter!

Layer on the Chocolate: To make these even more decadent, try adding a layer of melted dark chocolate to the top! Melt 85% or sugar free chocolate (about 2 ounces) with 1 tablespoon of coconut oil, and spread it out over the tops of the cookies before slicing.

Make these Vegan: All of our baking mixes are vegan-friendly! Instead of using the eggs and butter, these Keto Chocolate Chip Cookie Bars can be made with 6 tablespoons of coconut oil and 6 tablespoons of non-dairy milk.

The only thing better than a chocolate chip cookie is a Peanut Butter Stuffed Keto Chocolate Chip Cookie Bar! PB and chocolate are a match made in heaven, and these keto cookie bars are loaded up with both.

Ingredients:

  • 2 bags ZenSweet Chocolate Chip Cookie Mix (or 3 cups of mix)
  • 2 pastured eggs
  • 8 tablespoons grass-fed butter, melted
  • 1/2 cup peanut butter (or sub sunflower seed butter)

Instructions

  1. Preheat oven to 350º F
  2. Line an 8x8 baking dish with parchment, or grease the pan and use 2 tablespoons of cookie dough mix to coat it.
  3. In a medium sized mixing bowl, add ZenSweet Chocolate Chip Cookie Mix. Add the eggs and melted butter, being sure the melted butter is not hot (which will melt the chocolate chips). Stir to combine into cookie dough.
  4. In a small mixing bowl, add ⅔ cup of the cookie dough and the peanut butter. Stir to mix together.
  5. Take half of the remaining cookie dough, and press it into the bottom of the prepared pan into an even layer.
  6. Drop the peanut butter mixture into mounds on top of the cookie dough layer, and use wet hands to press it into an even layer.
  7. Drop the remaining cookie dough in mounds on top of the peanut butter layer, and use wet hands to smooth it into an even layer.
  8. Bake the cookie bars for 18 minutes. The cookies will look underbaked in the center, but brown around the edges. Allow them to fully cool before slicing into 16 bars.
