The Perfect Keto Cookie for Easter!

We love to make festive treats at home, rather than buying store bought holiday treats. All the fun without the sugar!

These grain free no-bake cookies are easy to make and adorable decorated with jelly beans. Use sugar free jelly beans if you’d like these keto cookies to remain low in carbs. We use a naturally dyed jelly bean for our kids, and are happy knowing the cookies overall have less sugar and are better for them.

If it isn’t Easter, or you don’t have kids to share these with, they make a great drop-cookie, sans jelly beans.

However you put together these fun keto no-bake cookies, they are absolutely delicious!

How to make

Step 1

Add the coconut oil, coconut milk, and ZenSweet Monk Fruit Sweetener to a pan. Heat over medium heat and stir until the sweetener has dissolved, about 5 minutes.

Step 2

Remove the pan from heat, and add the dark chocolate. Stir in the chocolate until it has melted.

Step 3

Into the chocolate mixture, add cashew butter (sunflower and almond butters work well in this recipe also!). Stir until it’s mixed in well.

Step 4

Add the unsweetened coconut and salt, and stir until it’s combined. Chill the cookie dough in the refrigerator for 30 minutes-1 hour so it’s easier to work with.

Step 5

Once the mixture has cooled, it will easily scoop into 1 tablespoon mounds (use a measuring spoon or a cookie scoop).

Step 6

Use a finger to press an indentation into the center of each mound, creating a nest. Fix any cracks by pressing the cookie together into a nest shape.

Step 7

The fun part! Decorate your bird’s nests with jelly bean “eggs.” There are lots of options out there now, both for sugar free and for dye-free. Choose what feels right for your family! You can also skip the jelly beans and use pumpkin seeds, freeze dried raspberries or blueberries, or nuts like hazelnuts or almonds.

Variations:

  • Make these Drop No-Bake Cookies: Looking for just a quick, keto no bake coconut cookie cookie? Skip chilling the cookie mixture, and just drop spoonfuls on a parchment lined baking tray, and then chill to set. There’s no need to make these bird’s nest cookies!
  • Skip the Jelly Beans: If you’d prefer not to use sugar free jelly beans in these cookies, try using nuts, like hazelnuts or almonds in the centers of each cookie. Freeze dried blueberries and raspberries would look cute (and be delicious!) here as well.
  • Add Peanut Butter: If you’re a PB fan, make these keto no bake peanut butter cookies by swapping the cashew butter for peanut butter. You can use almond or sunflower butter also, if you prefer those.
