S'mores Bars

  • Total Time: 7 hrs
These S'mores bars are so delicious! We all have extra time in the house right now so why not get in the kitchen and make some healthy sweets. The marshmallow recipe and cookie base is so easy, fun and a great activity for kids.

Ingredients:

For the Marshmallows

  • 1/2 cup cold water
  • 2/3 cup water
  • 3 tbsp gelatin
  • 1-1 1/2 cups ZenSweet to taste
  • 2 tsp vanilla extract
  • 1/4 tsp sea salt

For the S'mores

  • 1 bag ZenSweet Snickerdoodle Cookie mix
  • 1 cup low/no sugar chocolate chips
  • 1 batch ZenSweet marshmallows

Instructions

For the Marshmallows

  • Line a 9x9 pan with foil & grease well
  • Pour cold water into a stand mixer, sprinkle in gelatin, mix & let bloom 10 min
  • Pour 2/3 cup water in a pan with ZenSweet
  • Bring to a boil on medium heat, dissolve ZenSweet completely
  • Give it a rolling boil for 2 min. If you have a thermometer let it reach 210F/100C
  • With mixer on slow, break up gelatin and quickly add hot syrup
  • Increase mixer to high, whisk non stop for 15 min
  • At 8 min mark add salt & vanilla. At 12 min mixture will be stiff and hold shape
  • Quickly pour into prepared dish
  • Allow to dry, uncovered at room temp. for 6 hrs or overnight

For the S'mores

  • Preheat oven to 350F
  • Make the snickerdoodle cookies according to package instructions
  • Line an 8x8 baking pan with parchment paper
  • Press the cookie dough into the prepared pan
  • Bake for 8-10 minutes until cookies just turn golden brown
  • While cookies are baking and cooling, prepare the Marshmallows according to directions
  • When cookie pan is cooled cut into 16 squares
  • Top each cookie square with a piece of chocolate or chips and a 1 inch square of marshmallow
  • Place the topped cookies on a cookie sheet and broil for a short time to brown and melt the marshmallow. Enjoy!!
