The cake is made with low carb almond and coconut flours, and kept moist and rich with coffee. It’s a simple cake to make and so satisfying!

For this Keto Cake Recipe, You'll Need:

  • Almond Flour
  • Coconut Flour
  • Flaxseed meal
  • Baking Powder, Baking Soda & Sea Salt
  • High quality natural cocoa powder or raw cacao powder
  • ZenSweet Monk Fruit Sweetener
  • Pastured Butter
  • Pastured Eggs
  • Vanilla
  • Almond or Coconut Milk**

How to make

Step 1

In a large bowl, whisk almond flour, cocoa powder, coconut flour, flaxseed, ZenSweet monk fruit sweetener, baking powder, baking soda, and salt.

Step 2

In a stand mixer bowl, beat butter until light and fluffy. Add eggs and vanilla to the butter and stir well.

Step 3

Add dry ingredients to the wet and mix until combined.

Step 4

Divide batter between two pans and bake for about 25 minutes, or until a toothpick inserted in the center comes out clean, being careful not to over bake. Low carb flours dry out when baked too long, so it’s better that the centers of the cake are slightly underdone rather than overdone.

Step 5

Frost with our Keto Buttercream Frosting, or using your favorite low carb icing. This cake is also delicious layered with whipped cream and berries!

How to bake a keto chocolate cake: Cakes made with low carb ingredients dry out faster than standard cake ingredients. This cake will be fabulously moist if you’re careful not to over bake it. We list the bake time as 25-30 minutes, but recommend you start checking it at the 25 minute mark. This cake will have the best texture if it’s slightly underdone in the center, but fully cooked around the edges. The slightly underdone center will mostly finish cooking after you’ve removed it from the oven.

A rich and fudgy keto chocolate cake, made with wholesome, low carb ingredients. This cake is perfect iced with our Keto Chocolate Frosting, made with our powdered monk fruit sweetener.

Ingredients:

Dry Ingredients

  • 1 1/2 cups almond flour
  • 3/4 cup coconut flour
  • 2/3 cup cocoa powder unsweetened, or raw cacao powder
  • 1/4 cup flax seed meal
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon sea salt

Wet Ingredients

  • 1/2 cup pastured butter (1 stick)
  • 3/4 cup ZenSweet Monk Fruit Sweetener
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 cup almond milk or coconut milk beverage
  • 1/3 cup coffee strongly brewed

Instructions

  1. Preheat the oven to 350º F. Grease 2 8-inch pans, and line the bottoms with a circle of parchment paper. Set aside.
  2. In a medium sized mixing bowl, add all of the dry ingredients, and whisk to combine and break up any clumps in the coconut flour.
  3. In a mixer bowl, add the butter, and beat until fluffy. Add the ZenSweet monk fruit sweetener, eggs, and vanilla extract, and continue to beat until combined.
  4. Add half of the dry ingredients into the mixer bowl, and mix until incorporated. Alternate between adding the rest of the dry ingredients, the almond milk, and the coffee, and mix until just combined.
  5. Split the cake batter evenly between the two prepared pans, smoothing over the tops.
  6. Bake the cakes for 25-30 minutes, until fully cooked on the outer edges and slightly under baked in the center. Keeping the cake slightly under baked in the center is key to a moist and fudgy cake.
